Notes about the Honey Styles Runny honey is the squeezable honey that is most common here and you are most familiar with. It can crystallize over time. This is a completely natural process. Whipped or creamed honey will remain creamy and spreadable indefinitely, as long as it is never microwaved. This is a completely natural and raw process used to control the crystalline structure.

A spice-forward yet floral honey with notes of marjoram followed by orange sherbert. Finishes with notes of orange blossom and lingers with a touch of acid.

Notes about the Jelly, Jam & Preserves Styles These are single-sources jellies, jams and preserves, so you can compare and contrast the grape varietals. Jelly is clarified and translucent, made from juice only. This is what is most common for grapes in grocery stores. Grape preserves are unique, made from crushed fruit that is then strained, but bits of seed will remain. Preserves are thicker, opaque with some fruit texture remaining. Jam for grapes is unique. Jam is cold-presser juiced and only thick skin is removed (and grapes are a seedless variety). Jam is opaque and less firm than jelly. Grape preserves and jam are totally unique and not something you will find in stores!

Wiser Pink Reliance Grape Jam (not jelly - see note above) - 4oz - $4 minimum (2 available)
A sweet jelly with a distinct fruity flavor and hints of strawberry and tart red pear. The color is browner and not what you may think of as a grape color, as the skin of this grape is pink, but the pulp is green.
Wiser Niagara Grape Jelly - 4oz - $4 minimum (13 available); 8oz - $8 minimum (8 available)
A classic white grape related to the concord (the most common grape jelly in the store). It has an intense grapey flavor and a tartness with hints of apple blossom. Please note this jelly may exhibit a harmless flaw in the juice-making process and may have the occasional tartaric crystal that will zing on your tongue like a citric-acid candy.
Wiser King of the North Grape Jelly - 4oz - $4 minimum (13 available); 8oz - $8 minimum (1 available)
A grape jelly that isn't too grapey and is reminiscent of tart cherry. Please note this jelly may exhibit a harmless flaw in the juice-making process and may have the occasional tartaric crystal that will zing on your tongue like a citric-acid candy. It was actually the favorite of the testers, but please be aware of this possibility.

A classic grape but as homemade preserves instead of jelly. Grape-juicy flavor with notes of sweet plantain. It finishes tart with a full-bodied mouthfeel. The best bake sale concord preserves you will have!
