Jay has worked at some of the most important restaurants in NYC, including Marlow & Sons, Diner, Hart’s, King, and LaLou. Jay has decided to donate all proceeds of this class to the LaLou Employee Fund on GoFundMe. 

In this class, Jay will teach you how to make a whole fish baked in salt, accompanied by a flavorful salsa verde and boiled potatoes. It’s the perfect way to wrap up a long week and welcome the weekend. 

Jay will be cooking alongside you in real time, you will be able to ask him questions directly and get feedback on your cooking. This is a rare and intimate opportunity to cook with one of Brooklyn’s most beloved chefs. 

WHAT YOU’LL NEED

Salt Baked Fish:

  • 1 whole fish, Jay recommends: bronzino, porgy, sea bass, small red snapper (scaled & gutted)
  • 1 lemon
  • 3 bay leaves or 2 sprigs of thyme
  • 8 cups kosher salt (basically a whole container) 
  • 1 cup water


Salsa Verde: 

  • 2 cups parsley leaves
  • 1 cup tarragon, fresh oregano, or fennel fronds
  • 2 tablespoons dijon mustard
  • 2 tablespoons capers
  • 5 anchovy fillets (optional)
  • 1 cup olive oil
  • Pinch of salt 

Boiled Potatoes: 

  • 1lb potatoes 
  • olive oil 
  • black pepper 

“Special” Equipment: 

  • Sheet pan, or oven safe pan large enough to lay your whole fish on 
  • Parchment paper for sheet pan (optional)
