Kitchen Rodeo Presents: Cooking for Equity – Asian Chefs for Black Lives

This is a 10 part cooking series with some of the nation’s leading Asian chefs. All events in this series - in solidarity with Black Lives Matter - will support community organizations and Fair Fight, the anti-voter suppression organization founded by Stacey Abrams, playing a critical role in ensuring fair elections at all levels.

100% of proceeds from this event will go towards Fair Fight.

🔥WHAT'S COOKING

The marvelous Natasha Pickowicz, 2020 James Beard Outstanding Pastry Finalist and queen of protesting with pastries, is back at Kitchen Rodeo by popular demand with a combo that will satisfy your sweet tooth and keep you cool this summer.

In this class Natasha will teach you how to assemble a Chinese banquet must-have: the epic fruit platter, paired with an insanely addictive sesame brittle. Get. Excited.

Natasha will be cooking alongside you in real time. You will be able to ask her questions directly and get feedback on your dish - all from the comfort of your own home!

WHAT YOU'LL NEED

🍉EPIC FRUIT PLATTER

Depending on what is available to you in your neighborhood, pick and choose at least 2 items from each category, but you MUST get 1 small to medium sized watermelon, 2 regular cucumbers (not the small Persian style) and 1-2 Navel oranges!

(x2) FROM THE MARKET

1 small honeydew melon
1 cantaloupe
1-2 white or yellow nectarines
1-2 white or yellow peaches
handful strawberries
handful apricots

(x2) FROM THE GROCERY STORE PRODUCE SECTION

1-2 navel oranges
2-4 tangerines
1 pear
1 bunch green or red grapes
1 pineapple
1 mango
1 papaya
1 lemon
assorted fresh herbs (ie. basil, Thai basil, spearmint, mint, hyssop, parsley)

(x2) FROM THE GROCERY STORE DRY GOODS SECTION

1 can lychee
1 can tangerine segments
1 can longan
1 can loquat
1 can chayote (chow chow) preserves
1 jar candied cherries
1/2 cup white sugar

⚡️SESAME BRITTLE

1 cup total black or white sesame seeds (white sesame is more sweet and black sesame is much stronger in flavor)!
canola or vegetable oil
white sugar
honey (corn syup is ok here too)
unsalted butter
vanilla or almond extract
kosher salt
finishing salt (ie. a flaky salt like Maldon or Jacobsen)
optional: baking soda
optional: peanuts!

⚙️EQUIPMENT

melon baller / spoon / cookie cutters
wooden spoon
sharp kitchen knife
paring knife or serrated knife
vegetable peeler
small saucepot
rolling pin (or similar)
silicon mats (like Silpat), optional (use parchment paper if do not have)
non-stick cooking spray (neutral oil is ok here too)
long bamboo or wooden skewers
regular toothpicks
Sharpie marker
gloves (for added safety!)
