THIS RODEO IS THE SECOND IN A THREE-PART SERIES COLLABORATION WITH CHRONICLE BOOKS.

ALL PROCEEDS FROM THIS EVENT WILL GO TOWARDS KEVIN WONG'S DUCHENNE FOUNDATION, WORKING TOWARDS A CURE FOR DUCHENNE MUSCULAR DYSTROPHY.

💪 MEET THE CHEF 

Akhtar Nawab is co-CEO of food hall operations firm Hospitality HQ, the chef/owner of NYC's Alta Calidad, New Orleans' Otra Vez and advisor at Prather’s on the Alley in D.C. A protege of Tom Colicchio and mentor to David Chang, Akhtar been a figure in the dining scene for nearly 25 years, cooking in some of the country's top kitchens -- Craft, Craftbar and Gramercy Tavern.

His debut cookbook, Good For You: Bold Flavors with Benefits, was released in August 2020 by Chronicle Books:

🔥 WHAT’S COOKING

These Pumpkin Pancakes (a favorite of Akhtar's daughter!) are packed with protein from ground flax and coconut milk and lusciously rich from cashew puree. This recipe is both GF and RSF!
 

⚙️ WHAT YOU’LL NEED

Ingredients:

  • Gluten-free flour (or if preferred, AP flour)
  • Baking powder
  • Baking soda
  • Ground flaxseed
  • Eggs
  • Coconut milk
  • Unsweetened pumpkin puree
  • Raw cashews
  • Extra-virgin olive oil
  • Grated nutmeg
  • Cider vinegar
  • Kosher salt
  • Maple syrup and fresh fruit, for garnish

Equipment:

  • Mixing bowls
  • Measuring cups and spoons
  • Whisk
  • Blender
  • Large non-stick pan
  • Spatula

There will be no refund for cancellations for registration. All donations and sales are final.
