Celebrate all things spring with this seasonal dessert class! We’ll be making Strawberry-Matcha Cheesecake Trifle, led by Miro Uskokovic, head pastry chef at NYC’s beloved Gramercy Tavern.

Before joining Gramercy Tavern in 2013, Miro rose through the ranks in Manhattan’s most exclusive pastry programs, including Jean Georges and Aldea. Known for his contemporary American desserts, Miro has been recognized by The New York Times, Saveur, Bon Appetit and more.

Miro will be baking alongside you in real time, answering your questions, checking your ingredients and sharing his years of culinary knowledge. This is a rare and intimate opportunity to learn from NYC’s most respected and beloved pastry chefs.

WHAT YOU’LL NEED

Ingredients:

Cake flour or AP Flour + cornstarch
Baking powder
Matcha powder (or cornstarch + lemon zest and vanilla)
Powdered / Confectioners sugar
Kosher salt
Eggs
Lemon zest + juice
Neutral oil (canola / avocado / grapeseed / sunflower)
Cream of tartar or lemon juice
Cane sugar
Cream cheese
Full-fat greek yogurt
Sweetened condensed milk
Heavy whipping cream
Strawberries
Honey

“Special” Equipment:

Stand mixer with a bowl and whisk attachment or handheld mixer with whisk attachments and a couple of large mixing bowls.
Whisk
Rubber spatula
Small offset spatula
Two 8” x 3” round cake pans or Tube/Angel Food Cake Pan
Sifter or fine hole strainer
Few various size bowls or containers for scaling and mixing
Cooling rack
Trifle bowl or large glass dish that’s about 4.5 quarts in capacity
