Hola Sioux Falls Community and Beyond!

Hey there! Some of you may know us from Salas Salsas, a small batch fresh ingredient salsa company based in downtown Sioux Falls. Welcome to BibiSol Bodega & Provisions—the dream project of Marcela Salas, Patricia Burbine, and Chris Nelson — three passionate food lovers who've come together to spice things up with a dash of tradition and a whole lot of heart. We're thrilled to bring a slice of our heritage and the spirit of Mexican cuisine right to the bustling heart of Downtown Sioux Falls.

What's Going On:

We're reaching out to you today with honesty, humility, and hope in our hearts, something that doesn’t come easy to us because we're accustomed to giving rather than receiving help. We have had some setbacks which have delayed us opening of our restaurant, BibiSol Bodega and Provisions, and we are turning to our community because we need your help.

Since August 2022 we have been subleasing this downtown kitchen space that Sunny’s Pizzeria was selling pizzas out of to the weekend night crowd at 81 Arcade to play games. We took over this space during daytime hours with our Salas Salsas operation, making & packaging salsa, prepping for food events, and bringing culture to the infamous alleyway that runs behind our back kitchen door.

In May of 2023, we were approached by Anne from Pendar Properties to look at this available space. Conveniently located right in front of our kitchen. 219 S Phillips the home of Mrs. Murphy’s Irish Gift Shop the 22-year-old staple in downtown Sioux Falls. The decision to move forward was contingent on whether we could build a hallway into the space from our current kitchen. Once we knew we could we excitedly agreed.

The idea began by daydreaming of a modern dreamy earthy place with a bodega of Salas Salsas goods to pick up and take home and a Mexican Provisions Nixtamal menu that honors our indigenous ancestors and culture both from Mexico and the land we inhabit now.

Where We're At:

Construction is underway with $37,000 paid of the estimated buildout costs. Our initial loan process was drawn out, but we recently received approval from our credit union. We also recently applied to the SD Governor’s Office loan program and we’re still waiting to hear back from them. This has delayed the opening of BibiSol in ways we didn’t expect.

Our Ask:

This is where (we hope!) you come in. We’re asking for your help to raise $25,000 that will help our small business purchase equipment and finalize all the details before we open. Would you consider helping us build our dream and being a founder of the BibiSol community?

As small business owners, we aren’t in an income bracket that offers us much disposable income, but we see the value we bring to our community. We also know how scary it is to go into a venture with many risks. Every dollar and every share and comment truly does make a difference. Please help us share this message.
